Simple Salmon

Ingredients

Brine a 1.5 pound piece of salmon in:

  • 3 cups water
  • Juice of 1 lemon
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon sugar
  • 1 tablespoon kosher salt
  • 1 tablespoon Old Bay seasoning
  • 1 teaspoon black pepper

Directions

  1. Submerge fish completely in brine. Set in refrigerator for 1 hour.
  2. Remove fish from brine. Gently rinse under cold water.
  3. Set fish on drying rack for 1 hour or until slightly tacky.
  4. Smoke fish 1.5 hours @ 180 degrees
  5. Lightly brush fish with melted butter and increase heat to 275 degrees.
  6. Cook until fish will flake when pulled at with a fork but is still moist, about 1/2 hour.

Let fish rest 10 minutes. Serves 2 or 3 people.

Try this with cherry/apple pellets.
